Vegetable Pulav
This one-pot, quick and easy meal is the perfect midweek dish. It so delicious, everyone needs to try this combination of textures and flavours!
Ingredients
- ¾ cup pre boiled rice
- 1 cup chopped and boiled vegetable (carrots, beans, cauliflower, peas or potatoes)
- 1 tbsp cashews
- 1 tbsp raisins
- 3 Tbsp Oil/ ghee
- 1 Onion thinly sliced

Method
Step One
In a hot pan add 2 tbsp of oil fry the onion till brown, keep it aside. Add the cashews and raisins and sauté for minutes. Keep it aside
Step Two
In a spoon of oil add the boiled vegetable followed by the shahi masala. Squeeze in half a lemon. Cook for 5 minutes
Step Three
Add the boiled rice and toss till fully combined and all the moisture is absorbed
Step Four
Mix in the vegetables and masala. Cover with a lid and cook on a low fire for 5 min
Step Five
Garnish with the fried onions, cashews and raisins
Step Five
Serve with raita.
