Mixed Veg Butter Masala

This one-pot, quick and easy meal is the perfect midweek dish. It so delicious, everyone needs to try this combination of textures and flavours!

Ingredients

  • 200 grams mixed vegetables such as carrots, mushrooms, baby corn
  • 1 onion diced in large pieces
  • 1 capsicum/green pepper diced in large pieces
  • 2 tbsp oil

Method

Step One
Boil vegetables
Step Two
In a tbsp of oil sauté, the onion followed by the capsicum until soft. Add in the boiled vegetables and mix
Step Three
Add in the Butter Masala and cook for a further 7 -8 min with ½ a cup of water/milk. Adjust salt if needed
Step Four 
Garnish with some finely chopped coriander
