Malai Kofta Curry

This one-pot, quick and easy meal is the perfect midweek dish. It so delicious, everyone needs to try this combination of textures and flavours!

Ingredients

  •  200 gms potatoes
  • 100 grams paneer
  • 1 tbsp dry fruit such as raisins, cashew
  • 1 tbsp cornflour
  • 2 tbsp oil

Method

Step One
Boil, peel and mash the potatoes with salt and pepper.
Step Two

Roll it into balls the size of a lemon and stuff with crush of paneer and dry fruit.
Step Three
Roll the ball in cornflour and fry in oil (you can also air fry the ball with a spray of oil).
Step Four
In a pan take a tbsp of ghee/butter and add the butter masala. Let it simmer for a 2/3 minutes.
Step Five
Add in the fried koftas and serve with a sprinkling of dried fruit or swirl of cream
